Chole is indian cuisine made with kabuli chana(chickpea).
There are many versions of chole like pindi chole, amritasari chole etc. But I prepared normal masala chole.

- For soaking and boiling chole :
- 1 cup chole(chickpea)
- As needed Water for soaking chickpeas
- 2 cup water for boiling chickpea
- 1 tsp salt
- 1/4 tsp baking soda
- For preparing chole :
- 2 tbsp oil
- 1 bay leaf
- 2-3 cloves
- 1 tbsp cumin seeds
- 1 small cinnamon stick
- 1 onion,
- 6-7 garlic pods,
- 1 inch ginger paste
- 1 tomato,
- 2 pieces beetroot paste
- As needed Boiled chickpeas
- 1 tsp turmeric
- 1 tsp red chilli powder or as per your taste
- 1 tbsp cumin coriander powder
- 1 tbsp salt
- 1 tbsp chole masala
- 1/2 tbsp kitchen king masala
- 1/4 tsp kasuri methi
- as required chopped green coriander leaves
- For preparing dough of kulcha:
- 1 1/2 cup wheat flour
- 2 tbsp oil
- 1/4 tsp baking powder
- 1/2 tsp baking soda
- 1 tsp sugar
- 3 tbsp curd
- 1 tsp salt
- 1/4 cup or warm water as required for kneading semi soft dough
- For preparing kulcha :
- As needed Black sesame seeds
- 10 chopped garlic
- as required Chopped green coriander leaves
- as needed Oil
Instructions to make to make Chole with wheat kulcha
- For soaking and boiling chickpea: take a vessel or cooker wash and soak chickpea for 8 hours.
- After 8 hours put cooker for boiling chickpea with adding water, salt and baking soda.
- Meanwhile prepare gravy : take a blender and add chopped onion, 5-6 garlic pods and ginger and grind it and make a paste.
- Further, take a blender and add chopped tomato and 2 piece of beetroot for color and blend it.
- For preparing chole : heat oil on pan and add cloves, cinnamon stick, bay leaf, cumin seeds and let them crackle it. After that add onion, garlic and ginger paste.
- Once it is turns golden brown then add tomato-beetroot paste and stir well.
- After 2-3 minutes add boiled chickpea in it.& mix turmeric, red chilli powder, salt, cumin coriander powder and combine it well.
- Furthermore after 3 minute add chole masala, kasuri methi and kitchen king masala and mix well. After 5 minute add chopped green coriander leaves.
- For preparing dough for kulcha : take a vessel and add wheat flour. Make a hole in the middle of wheat flour and add oil, baking soda, baking powder, sugar, curd, salt and mix well all the ingredients.
- After that using warm water knead a semi soft dough and keep aside for half hour or 1 hour.
- Meanwhile chop green coriander leaves and garlic.
- After 1 hour knead the dough for 1 minute and make a ball from dough. Take a one ball dust wheat flour and press little with hands and apply oil in it.
- Next, stick chopped garlic, black sesame seeds and green coriander leaves one by one on ball.
- Now, roll the kulcha. After that apply water on one side of the kulcha.
- Further, heat a pan. put kulcha in such a way that watery side of kulcha will touch the heated surface of pan. And after 40 second when little bumps appear then flip the pan and keep on the flame as shown in the photo.
- Now kulcha is ready at last apply butter in it.
- Serve the Chole and kulcha.
