This is a very common winter delicacy from the Indian state of Uttar pradesh. These are made with rice flour covering with the filling of spiced chickpeas lentil along with some dip or chutney. People call it with different names like phara/fara/farre/fara gujhiya ect. Call it with any name it tastes awesome.

Ingredients and spices that need to be Make ready to make Rice Fara or steamed Rice savoury gujiya:

  1. For Dough
  2. 3 1/2 cup rice flour
  3. 1 tsp salt
  4. as needed Warm water
  5. For The Filling
  6. 1 1/2 cup chickpea lentil washed and soaked in water
  7. 1 tbsp cumin seeds
  8. 4-5 green chillies
  9. 7-8 cloves garlic
  10. Handful chopped Coriander leaves
  11. 1/2 tsp turmeric powder
  12. 1 tsp red chilli Powder
  13. As per taste Salt
  14. System for steaming the phara
  15. For Green Chutney
  16. 1 small onion roughly chopped
  17. 1 medium tomato roughly chopped
  18. 3-4 clives of garlic
  19. 1/2 inch ginger paste
  20. 1 whole red chilli
  21. 3-4 green chillies
  22. 1 tsp cumin seeds
  23. Handful chopped Coriander leaves
  24. 1 tbsp oil
  25. as per taste Salt

Steps to make to make Rice Fara or steamed Rice savoury gujiya

  1. Mix salt in rice flour and knead it to a soft, smooth dough. The water should be warm. The dough must be smooth but stiff. Knead it adding little water at a time. Knead it for a good 10-12 minutes. I knead it in a food processor you can knead it by your hand also. Remember it should knead very smoothly else it will break while making phare. Once done keep it in a container and cover it and rest it for 30 minutes.
  2. I had cleaned, washed and soaked the lentil in water for 2 hours. Later I drain out all the water. Then in a mixer grinder I had grinded garlic cloves, green chillies and cumin seeds to a coarse paste and then added the soaked lentil to it and grind again to a smooth paste. The I take it out in a bowl and grind all the lentils in the same grinder of same texture. Once all done mix it up very well to combine the lentil and spices together then add turmeric powder to it and mix.
  3. Then add salt, red chilli Powder, chopped Coriander leaves and mix very well. You can taste also to check the spices. Now our filling is ready and the dough is also ready. Let's start making the phara.
  4. Take a lemon size ball from the dough and roll it between your palms and flatten it then start stretching it from the sides making them thinner. Don't make the covering too thick otherwise it will not taste good. Once stretched to desired size add 1 full spoon of filling on it and then pinch it from 3 sides. You can see the photos to check how it is made. It looks like a samosa. You can make it in any desired shape.
  5. Once one batch is made steam it. Now for steaming take water in any wok and allow it to boil. Once boiled place a strainer on it brush it with oil and place the prepared pharas on it and cover it. Cook it on high flame for 10-12 minutes or until completely done. It will easily leave the bottom surface when done. I had used the rice cooker for steaming.
  6. You will see a shine on the cover when completely cooked and the filling will look stiff. Then take it out and serve hot with any Chutney or dip of your choice. Cut them in 3-4 pieces if you want before serving to make It easy to eat. Like so make all the pharas.
  7. For the Chutney or dip add all the ingredients mentioned above for Chutney in a mixer grinder and make a smooth paste of it then transfer it to a bowl. Later add salt as per taste and 1 tbsp oil and mix very well and the chutney is ready to be served. Adjust the consistency se per like. Add salt and red pepper as you like.
  8. Look how Perfectly it is cooked. You can make any chutney with it or any other dip /sauce you like.
  9. You can serve it with red chutney or green pudina Chutney. If the filling remains take a spoon full of batter and keep it on the boiler to steam. It will take 4-5 minutes and the steamed fritters are ready.
