  1. 2tbsp (15 gram) Chickpea flour (besan)
  2. 2tbps (15 gram) Semolina (suji/rava)
  3. 1 tsp Baking powder
  4. 1/4 tsp Salt
  5. 5-6 Pistachio chopped
  6. 4-5 Cardamom
  7. 1cup (1205gram) All-purpose flour (maida)
  8. 1 cup (125gram) Sugar
  9. 1 cup + (125 gram +) Ghee
  10. Use ghee as required (add ghee until you get a smooth dough)

  1. Into a blender jar add sugar, cardamom and grind it to fine powder
  2. Into a bowl add maida and besan
  3. Then add suji and give a quick mix, now add powdered cardamom and sugar
  4. Now add salt, baking powder and mix all the dry ingredients well
  5. Now add ghee and mix the ingredients to form dough (material looks dry add more ghee) use your fingers to combine for best results
  6. Add more ghee and combine dough (do not knead just combine the material all together)
  7. Silky smooth Cookie Doug is ready, let's shape them (use can choose your desired shape, I kept it simple and circular)
  8. Place all the cookies in a baking tray (leave gap in between the dough, as the dough will rise up)
  9. Now take a deep pan / kadai place a ring as shown in the image below, cover and pre heat 10 mins on low flame
  10. After 10 mins gently place the cookie tray in the pan, cover and bake on low flame for 15-17 mins
  11. After 17 mins our perfect nankhatai is ready to be served, serve it with a hot cup of masala chai..
