- For Dough
- 1 cup flour (maida)
- 1/3 cup Suji
- 1 tsp Ghee
- To taste Salt
- Water as required
- For red chutney
- 2 Dates
- 3-4 Allu bukharai
- 1/2 cup Immli
- 3 tbsp Gurh
- 1 tsp Zeera
- 1/4 tsp crushed Sount
- 2.5 tbsp Sugar
- 2 drops Red food colour
- For bundi
- 1 cup Baisan
- To taste Salt
- Pinch Baking soda
- Half tsp Red chilli powder
- Oil for frying
- Water
- For boiled potatoes
- 3-4 Potatoes
- 1/4 tsp Yellow food colour
- As required Water
- Salted yougert
- 1/2 cup Yougert
- 1/4 tsp Salt
- Sweet yougert
- 1 cup Yougert
- 2.5 tbsp Sugar
- Assembling
- 1 kachori
- 2 tbsp Boiled chick peas
- 2 tbsp Boiled potatoes
- 4-5 Bondiyan
- 1.5 tbsp Sweet yougert
- 1 tbsp Salty yougert
- 1 tbsp Green chutney
- 1.5 tbsp Red chutney
- 1/4 tsp Chat Masala
- 1 tbsp Chopped onions
- 1 tbsp Corriender
- 1 tbsp Daal sev
Instructions to make to make Raj kachori
- Dough prepration :At first take a bowl (tashla) add 1cup flour, 1/3cup Suji, 1tsp ghee and salt then add water as required
- Now begins to knead it to a firm dough until all water water absorbed them cover it in the cloth and let it rest for 30 min...
- Red chutney prepration : Take a blender flask add dates and separate it's seeds then add Allu bukharai pulp
- Now add almost 1/4cup of immli pulp and water then add 3tbsp of gurh, 1/4tsp of sount, 1tsp zeera, and 2.5tbsp of sugar..
- Then add red food colour and blend it for 5 min until mix properly...
- Bondi prepration :Add Baisan in a bowl then add salt, pinch of baking powder, 1/2tsp of red chilli powder and water as required mix it
- Then add oil in a wok then add the batter with hand golden brown them then dip them in water and rince water
- Then boil potatoes by adding Peel potatoes and add yellow for colour then take 1cup of yougert and add 2.5tbsp of sugar in it and beat it well..
- Then for preparing salted yougert then add salt in yougert and beat it and put aside... Now take the dough out of the cloth then make small balls then roll it with rolling pin.
- Then with a bowl cut a big circle then gently slid the kachori in medium hot oil wok
- Pour oil over it with until it comes upward... Then when it was golden brown then put it aside....
- Assembling :At first break the top crust of it and add 2tbsp of boil chickpeas then 2tbsp f potatoes cubes then add 5 to 6 baisan bondiyan
- Now add 1tbsp of salted yougert and 2tbsp of sweet yougert, 2tbsp of red chutney and 1tbsp of green chutney
- Then add 1tbsp of chopped onion and corriender and 2tbsp of sev then serve.... I made 6 to 7 kachori with the ingredient in the same way...
