- For Momo Filling--
- 1 small cauliflower grated
- 1 cup paneer grated
- 4-5 spring onion greens chopped fine
- 2-3 green chillies chopped
- 1 †ginger chopped
- 1 Tbsp Tandoori Masala
- As per taste Salt
- For Momo dough
- 1 cup Maida
- 1 tsp oil
- 1/2 tsp vinegar
- as required Water
- As per taste Salt
- For Momo marination-
- 1 cup yogurt
- 1/4 cup fresh cream
- 1 tsp red chilli powder
- 1 tsp Tandoori Masala
- 1 Tbsp gram flour
- 1 Tbsp ginger-garlic paste
- 1 tsp mustard oil
- As per taste Salt
- For Smoking effect
- 1 coconut husk
- 1 Tbsp ghee
- For Momo Frying-
- as required Oil to fry
- 1 Tbsp butter
- 1 lime juice
- 1 medium size tomato cubed
- 1 green capsicum cubed
- as required Tandoori Momos
Steps to make to make Tandoori Momo
- For Momo Filling - grated cauliflower and add little salt. Set aside for 15 mins. Drain the water and add to a bowl. Add grated paneer to it. Add Tandoori Masala and chopped green chilies, chopped spring onion greens and salt. Mix and set aside
- For Momo Dough - in a bowl add Maida, add oil, vinegar, and with water make a dough not too tight and not too soft. Smear with 1/2 tsp oil and set aside for 5 mins
- Roll out the dough and make peda shaped balls, flatten and with a rolling pin, roll out but keep the edges little thick. Complete the batch and keep it aside
- Smear the edges with little water and add the filling in the centre. Pinch one half, pinch on left side and right sides and taper the corners and make a diya shape

- Momo Marination - In a bowl add yogurt, fresh cream, mustard oil, Besan, red chilli powder, salt, Tandoori Masala, ginger-garlic paste and whisk well.
- In a wok heat oil and fry the Momo’s 70% and set aside
- Smear the Momos into the marination and set aside
- Take a coconut husk and put on the gas to give a smoky effect. In a bowl add the fried Momo’s, tomato cubes, capsicum and in the centre put a bowl and add the burnt coconut husk. Add ghee and close the bowl.
- Take the Momo’s and to give a charred look put on the gas for few minutes and set aside
- In the same wok heat oil and butter and add the charred Momo’s, capsicum, tomatoes and lime juice. Toss for 2-3 mins. Set aside
- Put the Momo’s into the skewers with capsicum and tomato. Heat oil in the wok and fry the Momo’s with a cover on for 1 min. The top would be juicy and the bottom fried.
