  1. For Momo Filling--
  2. 1 small cauliflower grated
  3. 1 cup paneer grated
  4. 4-5 spring onion greens chopped fine
  5. 2-3 green chillies chopped
  6. 1 ” ginger chopped
  7. 1 Tbsp Tandoori Masala
  8. As per taste Salt
  9. For Momo dough
  10. 1 cup Maida
  11. 1 tsp oil
  12. 1/2 tsp vinegar
  13. as required Water
  14. As per taste Salt
  15. For Momo marination-
  16. 1 cup yogurt
  17. 1/4 cup fresh cream
  18. 1 tsp red chilli powder
  19. 1 tsp Tandoori Masala
  20. 1 Tbsp gram flour
  21. 1 Tbsp ginger-garlic paste
  22. 1 tsp mustard oil
  23. As per taste Salt
  24. For Smoking effect
  25. 1 coconut husk
  26. 1 Tbsp ghee
  27. For Momo Frying-
  28. as required Oil to fry
  29. 1 Tbsp butter
  30. 1 lime juice
  31. 1 medium size tomato cubed
  32. 1 green capsicum cubed
  33. as required Tandoori Momos

Steps to make to make Tandoori Momo

  1. For Momo Filling - grated cauliflower and add little salt. Set aside for 15 mins. Drain the water and add to a bowl. Add grated paneer to it. Add Tandoori Masala and chopped green chilies, chopped spring onion greens and salt. Mix and set aside
  2. For Momo Dough - in a bowl add Maida, add oil, vinegar, and with water make a dough not too tight and not too soft. Smear with 1/2 tsp oil and set aside for 5 mins
  3. Roll out the dough and make peda shaped balls, flatten and with a rolling pin, roll out but keep the edges little thick. Complete the batch and keep it aside
  4. Smear the edges with little water and add the filling in the centre. Pinch one half, pinch on left side and right sides and taper the corners and make a diya shape
  5. Photo of the Momo. Complete the batches
  6. Momo Marination - In a bowl add yogurt, fresh cream, mustard oil, Besan, red chilli powder, salt, Tandoori Masala, ginger-garlic paste and whisk well.
  7. In a wok heat oil and fry the Momo’s 70% and set aside
  8. Smear the Momos into the marination and set aside
  9. Take a coconut husk and put on the gas to give a smoky effect. In a bowl add the fried Momo’s, tomato cubes, capsicum and in the centre put a bowl and add the burnt coconut husk. Add ghee and close the bowl.
  10. Take the Momo’s and to give a charred look put on the gas for few minutes and set aside
  11. In the same wok heat oil and butter and add the charred Momo’s, capsicum, tomatoes and lime juice. Toss for 2-3 mins. Set aside
  12. Put the Momo’s into the skewers with capsicum and tomato. Heat oil in the wok and fry the Momo’s with a cover on for 1 min. The top would be juicy and the bottom fried.
  13. Plate and enjoy
