- For the Samose filling - in a pan heat oil and add the chopped onions, fry till brown in colour. Add ginger paste and fry on medium flame
- Add chopped green chilies, pepper powder, roasted coriander powder, cumin powder, red chilli powder, turmeric powder and stir well
- Add chopped Kaleji and stir until half done
- Add boiler, peeled and cubed potatoes. Mash and cook well, add salt and mix. Add chopped coriander leaves. Cover to cook. Set aside to cool
- For Samose - in a bowl add Maida, oil, nigella seeds, salt and mix well. Add adequate water to make a dough. Keep it covered with a muslin cloth for 15 mins
- Roll out like Roti and divide into two, take one half and fold like a cone. Add the filling and with water close the sides. Make it sit on the plate. Complete the batch
- In a deep bottom pan heat oil and on medium flame add the Samose at least 4 and fry until golden in colour
